Sorcerer is the best option imo because you start off with a staff and a decent spell that has 30 casts (and you can get to two attunement stats right away. Then you just buy a second soul spear from Old hag melentia, boom, 60 soul spears). Use that setup and level faith until you unpetrify Rosabeth of Melfia for all that pyromancy goodness.
