The Thaumaturge feels more Witchy than the Witch. I suspect this is due to the some of the clear themes and inspirations for the thaumaturge hewing closely to Western occultism and folk-magic traditions. With the option to take a familiar and multi-class archetypes can't see any much of a reason to take the witch as a class.

We are allowed a free archetype in this campaign just fyi. So far I like the mirror a lot! It seems really fun in and out of combat.Way of the pistolero gunslinger. Dueling pistol (or 1 handed pistol of your choice) and a long air repeater. Use the air repeater for covering fire, fake out etc. Make sure you're trained in performance and take the Pistol Phenom archetype if you have free archetype.

Champion and Sentinel are almost always going to be the strongest combat-oriented archetypes for a Str Thaum. Imo, there are few archetypes worth taking 100% of, so I encourage you to not limit yourself in such a way with your FA slots.
