Sky Airlines uses the newer a320neo compared to LATAM's a319 or older a320s - I have flown both and you can tell LATAM planes had better days. But it's a very short so who cares how the interior looks.

Lake Titicaca is not so touristy, it all depends where you go. You can stay overnight in the lakeside village of Llachon for instance, it remains quiet. Our 17-day trip to southern Peru in October 2015 was absolutely amazing - it included Lima, Arequipa, Chivay/ Colca Canyon, Puno, Lake Titicaca, Cuzco, Sacred Valley, Machu Picchu and Puerto Maldonado.
